Creamy Cajun Chicken "Pasta"

  • 1/4cup butter
  • 2cups sliced white mushrooms
  • 2cloves garlic, crushed
  • 3/4cup sour cream
  • 3/4cup heavy whipping cream
  • 1/2cup parmesan cheese, grated
  • 1 1/2tsp. favorite Cajun seasoning
  • 2cups cooked chicken
  • 1whole spaghetti squash, cooked
  • Salt and pepper, olive oil, fresh parsley

Directions for the Spaghetti Squash

  1. Preheat oven to 400F degrees.
  2. Slice squash in half from stem to base.
  3. Remove the seeds and rub the inside with olive oil and salt and pepper.
  4. Place on parchment-lined baking sheet.
  5. Bake for 40-60 minutes, or until the sides are tender. Remove "spaghetti" with fork.

Directions for the Sauce

  1. In a large skillet over medium to high heat, melt butter and cook mushrooms for 5 minutes.
  2. Add garlic and cook for 1-2 minutes.
  3. Add sour cream and heavy whipping cream, and simmer for 5 minutes or until the sauce begins to thicken.
  4. Add Cajun seasoning and parmesan cheese, and stir until incorporated.
  5. Add chicken and spaghetti squash and cook for an additional 2-3 minutes, or until everything is heated through.

To Plate

Season with salt and pepper. Garnish with parsley.
