Fluffy Egg Muffins

Cook Time: 15 min.
Ingredients
- 4pasture-raised organic eggs
- 1Tbsp pure beef gelatin
Directions
- Preheat the oven to 400F.
- Separate the egg whites from the yolks, and beat the whites until stiff peaks form.
- Add the yolks and gelatin powder to the stiff egg whites and lightly mix/fold using a spatula.
- Add the mixture to a greased muffin tin (or pour into muffin cups) and bake for 10 minutes.
- Season with salt and optionally serve with avocado, kimchi, sauerkraut, or hot sauce.
Variations
Add butter while they are still hot, or cream cheese and spices if tolerated!
