Grilled Cajun Shrimp with Quick Braised Greens

Ingredients

  • 6large shrimp, peeled and deveined
  • 1Tbsp cajun spice mix (cayenne, paprika, garlic powder, black pepper, salt)
  • 1slice bacon, diced
  • 1/2bag of braising greens (spinach, baby kale, mustard greens, etc.)
  • 2Tbsp butter
  • tsp apple cider vinegar (ACV)

    Directions

    1. Turn your grill on high.
    2. Place shrimp on a skewer and season aggressively with cajun spice blend.
    3. Over medium-high heat, in a large saute pan, place half the butter with the bacon.
    4. Render out the fat and crisp up the bacon.
    5. Add the onion and caramelize slightly before adding the greens.
    6. Season with salt. Wilt greens and add vinegar.
    7. In the meantime, grill the shrimp 1-2 minutes on each side or until charred and cooked through.
    8. Melt remaining butter and brush over finished shrimp.

    To Plate

    Place greens on center of plate with shrimp on top.
